Air fryer salmon walks a narrow line: thirty seconds too long and the center turns chalky; too crowded and the skin never crisps. This method cooks two 6-oz fillets with a batch of green beans in one rotation, assuming a basket roughly 8 inches wide (standard 4-quart unit). Wider ovens can take three fillets if you leave half an inch between pieces.
Salmon thickness matters more than weight. Buy fillets 1 to 1¼ inches thick at the thickest point. Tail pieces that taper to nothing will overcook before the center sets.
Ingredients
- 2 skin-on salmon fillets (6 oz each), patted completely dry
- 8 oz green beans, trimmed
- 1 tbsp olive oil, divided
- 1 tsp kosher salt, divided
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika (sweet, not smoked — smoked overwhelms fish)
- Lemon wedges
- Optional: 1 tsp capers or chopped fresh dill for serving
Steps
- Preheat. Set air fryer to 400°F and preheat 3 minutes if your model recommends it. Empty preheat crisps skin faster.
- Season beans. Toss green beans with ½ tbsp oil, ¼ tsp salt, and pepper. Set aside.
- Season salmon. Mix remaining ¼ tsp salt, garlic powder, and paprika. Rub fillets with remaining ½ tbsp oil, then spice mix. Press skin side on a paper towel once more if it looks damp.
- First cook — salmon only. Place fillets skin-side down in the basket, not touching. Air fry 7 minutes without opening.
- Add beans. Quickly lay green beans around (not on top of) salmon. Air fry 4–5 minutes more until salmon registers 125–130°F in the thickest part for medium, or 135°F for medium-well, and beans are blistered with tender insides.
- Rest. Transfer salmon to plates, skin-side up. Rest 2 minutes. Serve with lemon squeezed at the table — acid on hot skin keeps it crisp longer.
Temperature notes by doneness
| Target | Pull at | Rest to |
|---|---|---|
| Medium (pink center) | 125°F | ~130°F |
| Medium-well | 135°F | ~140°F |
We do not recommend cooking past 140°F in the air fryer; carryover heat is minimal compared to oven roasting.
Why drying beats oiling
Excess oil drips off skin and pools under the fillet, steaming instead of frying. Two paper towels, pressed firmly on flesh and skin, beat any marinade here.
Substitutions that fail
Skinless fillets: Possible, but oil the basket lightly and reduce first cook to 5 minutes; flip carefully once. Skin is the insurance policy.
Frozen salmon: Thaw completely and pat dry, or cook from frozen with +4 minutes first stage — but skin will not crisp. Not worth it for this recipe.
Asparagus instead of beans: Works; reduce second stage by 1 minute. Thick carrots will not cook through — par-boil or skip.
Basket overcrowding
If fillets overlap, you get steamed patches. For four servings, cook in two batches and keep the first batch skin-side up on a warm plate tented loosely — beans can stay in and finish batch two alone in 6 minutes.
Cleanup and smell
Line the basket with parchment rated to 400°F with holes punched, or use a silicone liner. Wipe the heating element area if oil splattered — leftover grease smokes next time.
Meal prep angle
Cooked salmon keeps 2 days refrigerated. Flake cold salmon over meal prep grain bowls with a lemon-yogurt sauce (add yogurt after reheating grains, not before storage).
For another fast protein on busy nights, sheet-pan lemon garlic chicken fills the oven while the air fryer is occupied — different appliance, same 30-minute window.
Model differences we tested notes on
Basket-style units with top heating elements cook faster than oven-style front-load air fryers. If your salmon finishes early, note your model name on the recipe card and adjust −1 minute next time. Oven-style units may need +1 minute on the first stage.
Flip models exist — do not flip skin-on salmon here; skin contact with the basket bottom is the whole strategy.
Buying salmon at the counter
Ask for center-cut fillets similar thickness. Tail pieces cook unevenly. Skin should look shiny, not gray. If fish smells strongly fishy at purchase, cooking will not fix it — choose another piece or buy frozen vacuum-sealed (thaw overnight in fridge).
Green bean prep detail
Trim stem ends only; leave tail tip for presentation if you like. Pat beans dry if washed — water steams. For thicker haricots verts, keep timing; for bulky garden beans, add 1 minute second stage.
Complete plate in 20 minutes
While salmon runs, microwave a pouch of rice or reheat meal prep grains base. Drizzle same lemon over both. Dinner without a second recipe.
Food safety reminder
Salmon below 125°F internal is a texture choice, not a safety guarantee for all diners. Immunocompromised eaters, pregnant diners, or strict household rules may require 145°F — pull at 140°F and accept drier flesh. When in doubt, use a thermometer and err hot.
Store leftovers using our fridge guide; cooked fish gets 2–3 days max — eat before your chicken leftovers.
Side dish swap matrix
| Vegetable | Time change | Notes |
|---|---|---|
| Asparagus | −1 min second stage | Dry thoroughly |
| Broccoli florets | same | Smaller pieces −1 min |
| Zucchini half-moons | −2 min | Goes soft fast |
| Cherry tomatoes | add after salmon | 2 min only |
Stick with green beans until you know your machine's heat pattern — they are forgiving.
