Freezer chili should be thick enough to stand a spoon upright and mild enough that you can spike individual bowls later. This version skips beer (bitter notes amplify when frozen) and uses a dual bean mix for texture after thaw. One afternoon yields 8 servings — dinner tonight plus 6 quart bags for the freezer.
You need a 6-quart Dutch oven. Ground beef below 85% lean turns greasy; drain honestly or the frozen bags coat with white fat.
Ingredients
- 2 tbsp olive oil
- 2 lb ground beef (85% lean)
- 1 large yellow onion, diced
- 1 red bell pepper, diced
- 4 cloves garlic, minced
- 3 tbsp chili powder
- 2 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp kosher salt, plus more to taste
- ½ tsp black pepper
- 1 (28 oz) can crushed tomatoes
- 1 (15 oz) can tomato sauce
- 1 (15 oz) can kidney beans, drained
- 1 (15 oz) can black beans, drained
- 1½ cups beef broth or water
- 1 tbsp brown sugar or honey (optional, balances acid)
- Toppings when serving: shredded cheese, sour cream, cilantro, lime
Steps
- Brown beef. Heat oil in pot over medium-high. Add beef, break up, and cook until no pink remains, 8–10 minutes. Drain all but 1 tbsp fat.
- Soften aromatics. Reduce heat to medium. Add onion and pepper; cook until softened, 6–7 minutes. Stir in garlic, chili powder, cumin, oregano, salt, and pepper; cook 1 minute until fragrant.
- Simmer. Add crushed tomatoes, tomato sauce, beans, broth, and sugar if using. Bring to boil, then reduce to steady simmer. Partially cover and cook 45–60 minutes, stirring every 15 minutes, until thick and oil sheen appears on surface.
- Adjust. Taste. Add salt, extra chili powder, or splash of vinegar if flat. Chili should mound on a spoon, not run off.
- Cool for freezing. Spread shallow in a clean roasting pan and refrigerate until cold, 2–3 hours, or ice bath the pot base (never put hot glass lids in ice). Portion 1½–2 cups per quart bag, press flat, label with date.
- Freeze flat. Lay bags on a sheet pan until solid, then stack vertically like file folders — thaw time drops from hours to minutes.
Reheating without grainy meat
Stove (best): Slide frozen block into saucepan with ¼ cup water. Cover, low heat 15–20 minutes, stir and break up as it melts. Simmer 5 minutes until 165°F throughout.
Microwave: Defrost setting first, then heat in bowl stirring every 90 seconds. Texture suffers slightly; acceptable for desk lunch.
Slow cooker: Put frozen bag contents in cooker, low 4 hours or high 2 hours with ½ cup water.
Freezer timeline
| Storage | Quality |
|---|---|
| 0–2 months | Best |
| 3 months | Good, spice mellows |
| 4+ months | Safe if frozen solid at 0°F, but dull flavor |
What not to freeze in the pot
Sour cream, cheese, and raw onion toppings — add fresh. Pasta stirred into chili turns mushy; cook noodles fresh and ladle chili on top.
Thickness troubleshooting
Too thin after simmer: Uncover last 15 minutes or mash ½ cup beans against pot side.
Too thick after freeze: Expected — ice crystals squeeze water out. Add broth 2 tbsp at a time when reheating.
Serving ideas
- Over baked potatoes with cheese
- With no-knead flatbread for dunking
- On meal prep grain bowls instead of chicken one day
Storage after thaw
Once reheated, treat like fresh chili — refrigerate leftovers up to 3 days, do not refreeze.
Label bags with "eat by" three months out. Our fridge and freezer storage guide covers where flat bags should live (back of freezer, not door).
Spice level without regret
This chili is medium-mild as written — kid-friendly, adult-boring. Fix at the bowl:
- Hot: pickled jalapeños, cayenne pinch, hot sauce
- Smoky: chipotle in adobo blended in at reheat
Do not crank chili powder in the pot before freezing — capsaicin concentrates and mellows weirdly. Season fresh at serving.
Double-batch oven strategy
Two pots on one stove is awkward. Better: brown all meat in one pot, split aromatics between two pots, or use oven to finish — transfer to disposable roasting pans, cover, bake 300°F for 2 hours while you do laundry. Stir once. Same thickness goal.
Vegetarian swap
Replace beef with 2 extra cans beans plus 1 cup red lentils added with tomatoes. Simmer until lentils dissolve slightly to mimic body. Brown 1 lb mushrooms with onion for umami before tomatoes. Freezes the same.
Topping bar economics
Buy one block cheddar, grate yourself — pre-shredded anti-cake starch melts oddly. Sour cream in squeeze bottle lasts 2 weeks opened if you stand it upside down in fridge door (use storage guide door warning — fine for short-life condiments you finish fast).
Defrost planning
Flat quart bag thaws in fridge overnight or 30 minutes in bowl of cold water with bag sealed. Never hot water — outer layer enters danger zone while center is ice.
Why we skip beans in the freezer bag label drama
Some cooks freeze chili without beans (texture change) and add beans fresh at reheat. We accept softer beans over extra steps. If you hate mushy kidney beans, add them only when reheating for serving; freeze tomato-meat base only.
