Fresh-cooked rice fries into glue. Day-old rice from the fridge — grains separate, slightly dry — is what you want. This is the 20-minute dinner that clears a takeout container and a lonely half-onion at the same time.

Use a 12-inch skillet or wok over a burner that can get properly hot. A crowded 8-inch pan steams the rice and you will taste regret.

Ingredients

  • 3 cups cold cooked rice (jasmine or long-grain; break up clumps with wet fingers)
  • 2 tbsp neutral oil, divided
  • 2 eggs, beaten with a pinch of salt
  • 1 small onion, diced
  • 1 cup frozen peas and carrots (no need to thaw)
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tsp toasted sesame oil
  • Optional: 1 cup diced cooked chicken, shrimp, or tofu; pinch of white pepper

Method

  1. Egg first. Heat 1 tbsp oil on medium-high until it shimmers. Pour in eggs, scramble soft, and slide them onto a plate. Do not brown them hard — they finish later.
  2. Aromatics. Add remaining oil. Onion 2 minutes. Garlic 30 seconds. Frozen veg 2–3 minutes until no longer icy.
  3. Rice. Add cold rice. Press and chop with the spatula so grains separate. Let it sit 45–60 seconds between stirs so edges toast. If it sticks in a sheet, the pan is too cool or the rice was wet — turn up heat and keep chopping.
  4. Season off the direct puddle. Push rice aside, pour soy into the bare spot for 2 seconds, then toss. That quick fry on the sauce beats dumping cold soy on top and steaming everything.
  5. Finish. Return egg, add green onion and sesame oil, toss 30 seconds. Taste. Add a splash more soy only if needed.

Total active time after mise en place: about 12 minutes.

Cold rice you do not have yet

Cook rice in the morning, spread it on a sheet pan, cool, then fridge uncovered 30 minutes before boxing. Or freeze flat leftover rice; thaw in the fridge overnight. Hot rice from a cooker will clump — wait.

Mistakes that make cafeteria fried rice

  • Overcrowding so the pan never recovers heat
  • Adding soy too early and boiling the grains
  • Using short-grain sushi rice without accepting stickiness
  • Crowding raw meat into the same step — cook protein separately, then combine

What to serve with it
